1 whole cauliflower, outer leaves removed and cored
1/4 Cup Parmesan cheese
4 Tablespoons water

Into a microwaveable bowl large enough and deep enough to hold your cauliflower, add the water. Place the cauliflower topside down in the bowl and cover with plastic wrap. Poke a few holes in the plastic wrap for steam to release. Microwave on high for 5 minutes. Using oven mitts, remove from microwave and carefully turn the cauliflower over. I used a large spoon to help me flip it over. Recover the cauliflower and put back into the microwave for another 5 minutes. I check it at this pint to make sure it's cooked enough by pressing my finger on top of the cauliflower to see if its soft enough. Take the plastic wrap off and drain the water from the bowl. Sprinkle the Parmesan cheese over the top. You can use a spoon and break up the cauliflower or cut in to quarters. Serve and enjoy!

I wish I had come across this recipe 30 years ago! I love it. Easy, quick and delicious. You can change cooking times depending on the size of the cauliflower. If it's larger, you'll want to add cooking time to the start and finishing times. We love it with Parmesan cheese, pepper and a little smart balance. You could top it with anything you like. It's so good, that we have eaten just the cauliflower for dinner! I found this recipe on the internet and just changed the seasonings on top. I found that by using Parmesan cheese, pepper or paprika, I didn't have to use salt at all.
