1/2 cup dried green lentils
4 oz. pancetta, chopped
2 garlic cloves, diced
14-oz. canned diced tomatoes (Muir Glen recommend)
2 cups chicken stock
1 cup red wine
4 trimmed lamb shanks
2 medium potatoes, cubed (optional)
Handful of parley, chopped

Directions:
Directions:
Preheat oven to 325 degrees.

Put the lentils, pancetta,garlic, tomatoes, stock and wine in a large casserole dish and season with salt and pepper. Stir well to combined. Add lamb.

Cover and cook for 1.5 hours.

Turn the shanks over and cook covered for 30 minutes.

Add potatoes if using.

Cook covered for another 30 minutes until lamb is tender.

Stir in the parsley and serve one shank per person with a generous portion of the lentils/potatoes.

This is a great, simpler inexpensive dish that lasts for days. I added the potatoes for a more complete meal.
