3 cups plain flour
1 teaspoon salt
1/2 cup shortening
10 to 12 tablespoons cold water

Mix flour and salt. Divide shortening in half. Cut in first half with pastry blender until mixture looks like corn meal. Cut in remaining half till pieces are size of peas.
Sprinkle water, a tablespoon at a time, over part of mixture. Gently mix with fork. Push to one side of bowl. Sprinkle next tablespoon water over dry part; mix, push to moistened part. Repeat until all is moistened. Form into ball with fingers. Let stand several minutes.
Tear 16 squares of waxed paper.
Divide dough by fourths. Roll out on lightly floured surface till about 1/8" thick. Cut circles with can that is about 5 inches across. Place pastry circles on waxed paper squares till you have 16.
Place 2 tablespoons fruit mixture on each circle. A coffee measure holds about 2 tablespoons. Fold circle in half. Crimp edges with floured fork. Turn. Crimp other side.
Preheat large cast iron skillet. Add olive or other oil about 1/4 inch deep. Place 4 pies in pan. Cook on medium heat. Brown. Remove from skillet. Drain on paper towels. Add more oil to skillet for next four pies.
