3 cans enchilada sauce ( I use La Victoria )
1 can tomato sauce
1 onion, finely diced
4 c. Grated cheese
1 1/2 c. Lean hamburger
1/2 can green chilies
2 dozen corn tortillas
Green onions
Sliced black olives
Shredded lettuce
Chopped tomatoes
Sour cream

Directions:
Directions:
In a skillet, fry hamburger, onions and any spices that you like, cumin, chili powder, salt , pepper, oregano, garlic. Add chilies when meat is browned. In another skillet, warm enchilada and tomato sauce. Quickly dip tortillas one at a time in sauce. Fill each tortilla with small spoonful of meat mixture and some cheese. Roll and place seam side down in greased casserole dish.
When dish is full lightly cover enchiladas with more sauce. Do not use too much or they will be mushy. Then cover enchiladas with cheese. Don't hold back here! Sprinkle black olives over top. Bake at 350º for 30 minutes. Sprinkle with chopped green onions. Serve with sour cream, lettuce and chopped tomatoes. Yummy with refried beans and Spanish rice.
