1 pork tenderloin
1 clove garlic, minced
1/4 tsp. each grated gingerroot, salt and pepper
2 tsp vegetable oil

SAUCE:

2 tsp. vegetable oil
quarter sweet red pepper, sliced
1 hot red pepper, coursely sliced
1 clove garlic, minced
3 tbsp. Thai chili Sauce
1 tbsp each brown sugar, rice vinegar, soy sauce
1 tsp minced gingerroot
1 green onion, sliced

Directions:

Sprinkle pork with garlic, ginger, salt and pepper. Let stand for 10 min.

Heat oil over medium-high heat; sear pork all over, about 5 min.

Transfer to 400º oven; roast until juices run clear when pork is pierced and just a hint of pink remains inside, 15-20 min. Transfer to cutting board and tent with foil; let stand 5 minutes before slicing.

Sauce: Meanwhile, in small saucepan, heat oil over medium heat; cook red pepper, hot pepper, and garlic until tender, about 3 min. Stir in chili sauce, sugar, vinegar, soy sauce and ginger; simmer, stirring until reduced to 1/2 cup, about 4 min. Stir in green onions. Pour over sliced pork and serve with rice.
