1 med. onion chopped
2 jalapeno peppers with seeds or 3-4 without seeds
1 c. celery, chopped
1 c. green pepper, chopped
1 small jar pimentos, drained
1 can white corn drained
1 can black-eyed peas drained and rinsed
1 can black beans drained and rinsed
1 can red beans drained and rinsed
1 can pinto beans drained and rinsed

3/4 c. cider vinegar
1/2 c. oil
1 c. sugar
1 t. salt
1/2 t. pepper
1 T. water

Directions:
Directions:
Place onion, jalapeno peppers, celery, green pepper, pimentos, corn, back-eyes peas, black beans, red beans, and pinto beans in a large bowl. In a sauce pan mix cider vinegar, oil, sugar, salt, pepper, and water. Bring to boil and pour over bean mix. Refrigerate overnight. Serve with tortilla chips.
