2 & 1/2 cups self-rising meal
1 - cup self-rising flour
3 to 4 ribs of celery (Chopped)
3 onions (Chopped)
6 to 8 eggs
buttermilk - enough to mix as you would for cornbread
1/3 cup vegetable oil

Directions:
Directions:
Place celery and onions in the food processor and pulse until they are very fine, set aside. Mix meal, flour, eggs, oil and buttermilk as if making cornbread, add celery and onions, mix well. Heat oven to 350 degrees. I
cook my bread in a large iron skillet. Add enough oil in the skillet to cover the bottom, place in the oven until its hot, then pour the bread mixture into the skillet and bake for about 45 minutes or until it is done. When bread is done remove from oven and place in a large bowl or container for mixing the following ingredients: 1 large package of Pepperidge Farm Herb Dressing mix ,2 - cans of cream of chicken soup, 2 - cans of cream of celery soup,4 or more cans of chicken broth (enough to make a good moist mixture). Pepper to taste. I don't put salt at all in this dressing because the soup, broth and herb mix has enough. Spray a foil roasting pan; add dressing mixture, bake at 350 degrees for 45 minutes or until top is light brown. Everything is done before you put it in the oven.
