2 c. flour
2 t. baking powder
large pinch salt
1 1/2 sticks butter (or combination of butter and lard)
1 1/2 c. sugar
1 1/2 c. golden raisins
2 eggs
About 4 T. milk

Directions:
Heat giddle. Sift flour, baking powder and salt into a bowl. Cut the butter and rub into the flour with fingertips until the mixture resembles fine breadcrumbs. Stir in the raisins and sugar, beat the egg lightly and add to the flour mixture. Add enough milk to give a firm paste similar to a short-crust pastry.

Roll the dough about 1/4 inch in thickness on a floured surface, and cut out rounds using a 3 inch plan or fluted pastry cutter. Bake the cakes on the greased griddle, over low heat for about 3 miniutes on each side, until golden brown. Cool on a wire rack, and serve with a dusting of sugar.
