5 peeled, sliced fresh pears
1 cup sugar
1/4 cup flour
1/2 tsp grated lemon peel
1/2 tsp cinnamon
1/8 tsp salt
2 Tbsp fresh lemon juice
2 Tbsp butter, cut in small pieces
2 pie pastry
shredded gruyere (to taste)

Directions:
Directions:
Preheat oven to 425. Line 9" pie plate with pastry. Sprinkle with gruyere. Add sliced pears. Combine sugar, flour, lemon peel, and seasonings; sprinkle over the pears. Drizzle with lemon juice and dot with butter.

Cover with second pastry; flute edges. Sprinkle with more cheese. Cover edges with foil. Bake at 425º for 20 min. Remove foil and bake for 10 min.
