1 lb scallops
3/4 lb mushrooms
1 green or red bell pepper
3 green onions
5 Tbsp butter, divided
1/4 to 1/2 c milk
3 Tbsp flour
1/2 tsp salt (or to taste)
Dash ground black pepper (to taste)
1/8 tsp dry mustard
Hot cooked rice (optional)

Directions:
Slice mushrooms and green onions, dice pepper. Melt 3 tablespoons of the butter in large skillet, add peppers and cook for a minute or two. Add mushrooms, onions and scallops to pan, cover and simmer until scallops are just cooked (do not overcook). Drain, (reserving liquid), place in serving dish and keep warm. Meanwhile, melt the remaining 2 tablespoons of butter in small sauce pan. Whisk in enough flour to make a thick paste (about 3 tablespoons), and cook for a minute whisking constantly. Add milk to reserved liquid from cooked scallops to make 1 cup. Add milk/liquid gradually to roux stirring constantly with whisk. Cook and stir for several minutes until it thickens. If too thick, add a little more milk. Pour sauce over scallops and serve. May serve over hot rice if desired Serves 2-4
