1 large Chinese squash, peeled, halved and cut on the diagonal
2 tbsp dried shrimp
2 cloves garlic, crushed
1 tbsp olive oil (Not Extra Virgin)
1/2 tsp salt
1/2 tsp sugar
1/2 tsp chicken bouillon
1 tsp Chinese rice wine
1/8 tsp white pepper
1/4 cup water
1/2 tsp sesame oil

Substitute any of the following Chinese squash:
Winter Melon
Fuzzy Gourd
Luffa Gourd
Bottle Gourd
Wax Gourd

1. Rehydrate dried shrimp in warm water overnight. Drain and chop coarsely.

2. Wash and peel Chinese squash of choice. If the seeds are hard and the squash's inside's fibrous, then remove them. If the seeds are young, they are edible. Cut the squash in half lengthwise. Cut into 2 inch long pieces diagonally.

3. Heat a pan on high heat until very hot. Coat pan with olive oil. Toss in garlic and dried shrimp and stir-fry until fragrant. Toss in squash, season with salt, sugar, chicken bouillon, Chinese rice wine, white pepper and pour in water. Give a good mix, cover and simmer for 10 to 15 minutes.

4. Drizzle on sesame oil before serving, and arrange on plate.

Note: Serve with steamy hot rice and tofu for a vegetarian dinner or you can add meat or fish to the squash for a well rounded meal.
