4 whole eggs, lightly beaten
6 oz oysters, shelled
1 green onion, trimmed, cut in 1 inch pieces
2 tbsp olive oil (Not Extra Virgin)
1 tsp salt
1 and 1/2 tbsp soy sauce

Directions:
Directions:
1. Bring small sauce pan of water to a boil. Add 1/2 tsp salt. Drop in the shelled oysters and blanch for 1 to 2 minutes. Drain and coarsely chop.

2. Beat 4 eggs together with 1/2 tsp salt

3. Heat a pan on high heat until very hot. Coat pan in olive oil. Toss in oysters, green onions, and eggs. Allow the egg to set into large pieces. Fry until golden brown. Arrange on platter and sprinkle on soy sauce.

Note: Serve with steamy hot rice and leafy greens.
