4 whole eggs, lightly beaten
1 large bitter melon, seeded and thinly sliced OR Chinese long green beans, 1/4 inch dice (2 cups)
1 tbsp olive oil
1/2 tsp salt

Directions:
Directions:
1. Heat a pan on high heat until very hot. Coat with olive oil. Add in cleaned and sliced bitter melon or green beans, and salt and stir-fry until just cooked and still crisp.

2. Pour in the beaten egg and allow to set in large pieces. Serve up on platter and sprinkle on soy sauce

Note: Serve with steamy white rice.
