1 tbsp soy sauce
1 tbsp Chinese rice wine or dry sherry
2 tsp cornstarch
3/4 lb boneless lamb (leg or loin) cut into thin slice across the grain
2 tbsp low sodium chicken broth
2 tbsp hoisin sauce
2 tbsp olive oil (Not Extra Virgin)
3 cloves garlic, minced
3/4 cup julienned red bell pepper
4 green onions, cut into 1 and 1/2 inch pieces

Directions:
Directions:
1. Mix soy sauce, rice wine, cornstarch throughly. Add lamb and mix well. Let stand for 10 minutes.

2. For the sauce, mix chicken broth and hoisin sauce.

3. Heat pan over high heat until very hot. Coat with olive oil. Add garlic and stir till fragrant. Add the lamb and stir fry until barely pink, 2 to 3 minutes. Add the red bell pepper and cook for 1 minute.

4. Add the green onions, stir-fry for 1 minute. Add the sauce and bring to a boil. Simmer until the sauce thickens and serve.

Note: Serve with steamy hot rice and leafy greens.
