1 batch Amarene jam, 1 batch pasta frolla dough.

Directions:
Roll out one-half of dough to fit the bottom of a jelly roll pan. Place the amarene jam over the dough. Cover with the other half of the dough rolled out. Crimp the edges and cut several air vents on top of pastry dough. Bake at 350º for 45 minutes to one hour or until crust is golden brown. Cool and cut into small squares.
Variation 1: Melt six oz. semi-sweet chocolate and spread over the bottom layer of dough. Top with the Amarene jam and the pastry dough and bake as above.
Variation 2: Substitute apricot preserves for the amarene. Sprinkle with toasted almonds and cut the top pastry dough into a lattice pattern instead of a solid layer of dough. Bake as above.
