4 medium zucchini, 1/2" thick, steamed
3/4 cup shredded carrots
1/2 cup chopped onions
2 T margarine
1 can cream of chicken soup
1/2 cup sour cream
1-1/2 cups herbed crutons

Saute carrots & onions in butter. Add remaining ingredients, fold in zucchinis. Top with more crutons
