1 lb boneless beef chuck, cut into 1 inch cubes
2 and 1/2 cups of low sodium chicken broth
3 tbsp dark soy sauce
1 tbsp sugar
1 piece of dried tangerine peel (about 2 inch square)
1 whole star anise
8 thin slices of ginger, lightly crushed
2 cloves garlic, lightly crushed
1 and 1/2 cup daikon, cut into thick half-moon slices
1 cup russet potatoes, cut into 1 inch cubes
1 tbsp cornstarch, dissolved in 2 tbsp of cold water

1. Place the beef chuck in a 3 to 4 quart pan. Add the chicken broth and dark soy sauce, sugar, tangerine peel, anise, ginger, and garlic. Bring to a boil, and lower heat to a simmer. Simmer for an hour. Add some water if the chicken stock evaporates too quickly.

2. Add the daikon, potato, and carrots. Make sure they are submerged and simmer till the vegetables are tender. About 25 to 30 minutes. Add the cornstarch solution while stirring and simmer till the sauce thickens.

Note: Serve with hot rice or on precooked wheat noodles as a sauce.
