Serves 4 to 6
6 dried shiitake mushrooms
1 lb winter melon
6 cups chicken broth
1/2 julienned holiday ham
1/2 cup shredded carrots
1/8 tsp white pepper
1/4 tsp sesame oil

Directions:
Directions:
1. Rehydrate shiitakes in warm water overnight. Discard the stems and slice the caps into 1/4 inch slices

2. Cut off the melon rind and discard. Remove the seeds and stringy fibers. Cut the winter melon into 1/2 inch cubes.

3. In a medium soup pot, bring the chicken broth to a boil. Add the mushrooms, winter melon, ham, carrots, and white pepper. Simmer covered until the vegetables are tender. About 10 to 15 minutes. Stir in the sesame oil just before serving.
