Yields: 8 servings
10 oz white fish fillet, thinly sliced
2 tsp cornstarch
3/4 tsp salt
1/4 tsp white pepper
5 cups low sodium chicken broth
3 slices ginger, julienned
1/4 cup thinly sliced carrots
4 cups spinach leaves
1/2 package ( 8 oz ) soft tofu, cut into1/4 inch strips
8 to 10 sprigs cilantro

1. Pat the fish dry with a paper towel, quickly marinade the fish in the cornstarch, salt, and white pepper.

2. In a medium soup pot, bring the chicken broth to a boil. add the fish and ginger, reduce the heat to medium and simmer for 1 minute. Add the carrots, spinach, tofu, and cilantro. Simmer for an additional 2 minutes.

Note: Serve with rice and possible another side dish.
