"that garlic sauce" (Mojito):
10 cloves garlic
1 teaspoon fine sea or kosher salt
1 medium Spanish onion, chopped fine
¾ cup gently warmed olive oil
¼ cup white vinegar
Juice of 1 each: lime, orange, and lemon
2 tablespoons cilantro

Tostones:
Green plantains

Vegetable oil

Mojito:
Simply, mash up the garlic and salt to a paste using a mortar and pestle. Stir in the onions, then the remaining ingredients. Taste and add a little salt if needed.

Tostones:
Peel green plantains (see above), slice into ½ inch thick rounds, and immediately soak in cold salted water. Pour enough veg oil into a skillet to fill about 1inch.
Drain the plantain rounds and dry them thoroughly. Slip as many of the plantain pieces into the oil as fit without touching. Fry, turning once or twice, until fork tender, but not browned. Remove and drain on paper towels. Let them cool 5 to 10 minutes or up to 2 hours.

Using a tostonera , a kitchen mallet, or even the bottom of a large cup (I do), whack the plantain slice down so that it is smashed, but still retains its shape.

When you’re ready to serve the plantains, reheat the oil and add a batch of your "smushed" plantains back into the hot oil and fry, turning once, until golden brown, about 2 minutes. Drain on paper towels.
