3 pounds (12 medium) potatoes
1 8 oz. cream cheese or cottage cheese, room temperature
1/4 cup margarine
1/2 cup sour cream
1/2 cup milk
2 eggs, lightly beaten
1/4 cup finely chopped onion
1 teaspoon salt
1 dash pepper

Directions:
Directions:
Peel, cook, and mash potatoes. Add margarine, sour cream, and seasoning to hot potatoes. Add eggs and onion to milk & cream cheese (use a blender for cottage cheese). Add egg mixture to the potatoes. Put into a greased 9-inch round casserole (can refrigerate until ready to bake). Bake at 350º for 45 minutes until lightly brown on top.
