Ingredients:
Ingredients:
1 1/2 -2 lbs boneless, skinless chicken thighs
1 large onion, chopped
3 cloves garlic, minced
1 chunk ginger, grated
curry powder
garam masala (optional)
chicken broth
coconut milk
unsweetened applesauce

Directions:
Directions:
Season chicken with salt and pepper. Set aside. Heat 2 T olive oil over medium heat, in a Dutch oven or large pot. Add chicken to the pot and liberally sprinkle each piece with curry powder and garam masala. Sear meat on both sides until it is golden brown. Remove to a platter. Add another 2 T of olive oil to the now empty pot and when hot, add onions and garlic to hot pan. Dump in a palmful of curry powder and saute until vegetables are soft and fragrant. Add chicken to the pot. Pour in about 1/2 cup chicken broth, or until the chicken is barely covered. Heat to simmering, then add a few spoonfuls of applesauce. Simmer until thickened. Pour in half to a full can of coconut milk. Thin with a little more chicken broth. This recipe is totally subjective and is completely different every time I make it. If you add to much liquid, then call it a soup. :) Add half a package of green peas, or a handful of fresh green beans and cook for a few more minutes, until just crunchy. Serve over rice.

Personal Notes:
I never measure when I cook this, so if you are a perfectionist, you will not like cooking this for the first time. It is so good, you will want to keep playing with it again and again. You can't really mess it up. Enjoy!
