4 1" thick pork chops (about 2 lb)
1 Tbsp olive oil
2 onions, sliced
1 green bell pepper, cut into chunks
1 tomato, cut into wedges
2 cloves garlic, minced
1/2 tsp turmeric
3/4 tsp pepper
1/2 tsp paprika
1 tsp ground cumin
Salt to taste
2/3 c rice
1 1/3 c chicken broth
1/3 c black olives, pitted and cut up (optional)
2 Tbsp chopped parsley (optional)

Directions:
Directions:
Brown chops in oil over med-high heat, about 8 minutes. Remove. Add onions and green pepper, cover, and cook 3 minutes. Add tomato, garlic, spices, salt and rice and stir 1 minute. Add stock, cover and simmer 5 minutes. Add chops and any accumulated juices, cover and cook until rice is done and chops are cooked through, about 20 minutes. Sprinkle with olives and parsley if using.
