Ingredients: 1 lb. top round steak ¼ c. soy sauce 1 Tbsp. cornstarch 1 Tbsp. sherry or white wine (or water) 1 tsp. sugar 2 Tbsp. sesame oil (or peanut or vegetable) 2 c. sliced sweet peppers (2 or more colors is pretty) 1 c. vertically sliced onion ¼ tsp. salt ¼ tsp. crushed red pepper 1 Tbsp. grated peeled gingerroot (I use the jar you can buy in produce) ¼ c. water

Directions:Cut steak into thin slices. Make a marinade of the next 4 ingredients and pour over steak. Refrigerate for at least 15 minutes.
Heat 1 Tbsp. oil in a large skillet or wok over medium high heat. Stir-fry onions 3-5 minutes, add peppers, salt and red pepper and continue to cook for a few more minutes until vegetables are crisp-tender. Remove to a plate. Add the remaining Tbsp. oil to the pan and heat until high. Add half the meat and fry until pink is just gone. Remove and add remaining meat and ginger to pan, frying as before. Return all meat to pan. Add marinade and water and heat until sauce thickens. Add vegetables and combine. Serve over rice or noodles.
