12 oz. Strip steak
1/4 C. onions, diced
1 Tbsp. butter
3 oz. heavy cream
1 Tbsp. butter

Directions:
Directions:
Pound steak into 1 in. thickness
Cover one side of each steak first with 1-1/2 tsp of mustard and then half the onions, pressing firmly in the steak
Saute the steaks in the first Tbsp. of butter onion side down first, remove and hold in warm place
Drain pan. Add the cream and rest of the mustard, simmer 5 min. Adjust seasoning and serve steak with sauce
