Juice of one lime
1/2 tsp. sugar
2 cups cubed papaya
8 cherry tomatoes, cut in half
1/2 cup thinly sliced red onion
1/4 cup chopped mint
1/2 cup thick ranch dressing
6 cups of baby spinach

Directions:
Directions:
Combine the lime juice and the sugar. Mix with the papaya. Add spinach, tomatoes, onions and mint. Toss and divide between four salad plates. Drizzle with ranch dressing.

Personal Notes:
When papayas are not available one can use strawberries cut in half (lengthwise). Mangos can be used as well. Can vary amounts of fruit, tomatoes, red onions and spinach. Don't add all of mint as the same time. Use Good Seasons Dry buttermilk Ranch Dressing. Variation for dressing: 1 cup buttermilk, 1/2 cup mayo, and 1/2 cup sour cream.
