16 veal cutlets
1 onion, chopped
1 tbsp olive oil
1 lb button mushrooms, chopped
1 1/2 cups soft bread crumbs
2 tbsp dried parsley
1/4 tsp each salt and pepper
1/8 tsp each thyme and basil
3 tbsp flour
1 cup chicken broth
Bay leaf

Directions:
Directions:
Pound veal cutlets until very thin.
Cook onions in olive oil.
Add mushrooms, bread crumbs, spices and 1/4 cup water.
Spread stuffing on each cutlet. Roll and hold closed with a toothpick.
Roll each bird in flour.
Cook in same skillet until well browned (add more oil if needed).
Place in casserole and bake for 30 minutes at 350º
Add broth and bay leaf to same skillet. Bring to boil and simmer for 5 minutes.
Pour over the birds and bake for an additional 30 minutes.
