2 cups butter or margarine
2 cups white sugar
2 cups brown sugar, packed
4 eggs
2 tsp vanilla extract
4 cups flour
5 cups rolled oats
1 tsp salt
2 tsp baking soda
2 tsp baking powder
2 cups chocolate chips
1 cup coconut, shredded, unsweetened (optional)

Directions:
Directions:
Cream butter or margarine, white sugar and brown sugar in a large bowl until smooth. Beat in eggs and vanilla until light and fluffy. In a medium bowl, combine flour, oats, salt, baking soda and baking powder. Stir flour mixture into egg mixture until blended. Stir in chocolate chips. On a cookie sheet or tray covered with waxed paper, drop cookies by the TBSP onto the sheet. Flash freeze in the freezer until firm. Once firm, put in a freezer bag and label. Cook un-frozen cookies 13-16 minutes in a preheated oven at 350F. Frozen cookies may require a couple of extra minutes. This allows you to cook just a few at a time!
