2 tbsp olive oil
1 bell pepper (any color whatever your preference is) diced
1/2 red onion diced
1 package summer sausage
1 potato per person you are serving (min 1, max 4) diced into similar size
season salt
oregano
garlic powder
salt
pepper
any other seasonings that catch your fancy

Directions:
Directions:
In a large skillet, heat olive oil and add vegetables. Cook for 1 minute then add potatoes. While potatoes are cooking, slice sausage. Stir potatoes. Add in half of seasoning. Continue to cook potatoes until they are nearly soft. Throw in sausage. Mix well. Add in rest of seasonings. Continue to cook until potatoes are soft and flakey.

The seasoning quantities should be based on personal tastes. This is a hard to screw up one dish meal. You can add whatever you would like to it, and adjust to make it your own.
