1 lb Cavateppi or other chunky pasta
1/4 c olive oil
2 large onions, minced
3 Tbsp minced garlic
5 carrots, peeled and sliced thin
3 large tomatoes, chopped
3/4 tsp salt
1/2 tsp crushed red pepper
1 red bell pepper, chopped
1 - 2 lb frozen mixed shrimp, scallops and calamari
2-3 c small broccoli florets
Variations: fresh spinach roughly chopped, green pepper, fresh herbs (marjoram, basil, others)

Cook pasta, drain and reserve. Heat oil in Dutch oven or large pot. Cook onion, garlic and carrot for 3 minutes. Add tomato, salt, peppers and simmer for 20 minutes. Add seafood and simmer till done. Add broccoli for last few minutes. (if adding fresh spinach, add at end and heat just till wilted). Serve over pasta.
