Spicy Cashew Brittle Recipe

1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt
1 1/2 c. cashews1 T. butter
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. ground habanero chili powder or another spice of choice( i use Asian 5 spice

Spray a cookie sheet with cooking spray and set aside. Combine sugar, corn syrup and salt in microwave bowl (8 c. glass measuring cup works well) until well mixed. Microwave, uncovered, on high for 3 minutes. Remove and stir. Return to microwave and cook on high until the mixture boils, approximately 3-4 minutes. Remove from the microwave and stir in cashews, butter and vanilla. Cook on high for an additional 3-4 minutes, or until the candy turns a golden color. Remove from the microwave and quickly stir in the baking soda. Careful the candy will be very hot and foam up when you add the baking soda. Immediately pour the candy onto the cookie sheet and sprinkle with spice. Using a spatula, spread the brittle as thin as possible. Do these steps very quickly as the brittle sets up fast. Cool 1-2 hours. Break apart and store in an airtight container. Note: DO NOT DOUBLE RECIPE! Make batches individually!
