2 cups dried cannellini beans
2 sprigs fresh sage
1 bay leaf
4 garlic cloves, peeled
1/4. Cup olive oil (or more to taste)
Handful of chopped parsley
1 scallion, chopped fine including most of the green stem
Juice of one lemon

2 cans tuna

Directions:
Directions:
Dissolve 3 T table salt in 4 qt. water
Soak beans overnight (8-24 hours) in the water
Drain and put in a large saucepan with the sage, bay leaf and garlic cloves.
Cover with cold water and boil for 1 hour or until beans are tender but not mushy.
Drain and discard the sage, bay leaf and garlic.
Stir in the olive oil, parsley, scallion and lemon juice.
Season with salt and pepper to taste.
Put each can of tuna on a separate plate and surround with beans.
(Another option is to mix ten tuna in with the beans and serve.)
