1 c. old-fashioned oats
1/2 c. brown sugar
1 T apple cider vinegar
1 c. vanilla soy milk
1 c. oat flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 tsp cinnamon
2 T oil

Directions:
Directions:
Put oats and brown sugar in a mixing bowl. Pour vinegar and milk over top. Allow to soak while mixing other ingredients.

Mix oat flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.

Add oil to oat mixture and mix. Add dry ingredients to wet ingredients and mix all together. Pour into muffin pans, using liners, filling each cup about 1/2 full.

Bake at 350ºF for 20 minutes. Allow to cool for a few minutes in muffin pans before removing, and then enjoy!

Oat flour can be purchased at a specialty store, or in the health food section of your local grocery store. However it is easy and cost-effective to grind your own oats. Simply pour whole oats into your blender and pulse until all of the oats are ground into flour. The oat flour can be stored just as you would store other fours.
