Long French baguette
5 Medium tomatoes (chopped)
3 cloves minced garlic
juice from 1/2 lime
1/4 Cup extra virgin olive oil
1 Cup freshly grated Parmesan cheese
1 Tbsp fresh basil
Kosher salt and pepper

Directions:
Directions:
1. Mix diced tomatoes (juice and all), minced garlic, olive oil, lime juice, 3/4 cup Parmesan cheese (keep the rest for later), basil, and salt and pepper (to taste).
2. Allow to stand for several hours to marinade. Slice bread at an angle, brush one side with melted butter, and broil on each side until brown.
3. Spoon mixture onto bread, and top with reserved Parmesan. Broil until cheese has melted.
4. Best when served immediately to avoid getting soggy. Ingredients may be adjusted depending on your taste.
5. You can substitute the parmesan cheese using a slice of mozzarella -- 1/4 inch thick -- before adding a spoonful of the tomato mixture. After browning the bread slices, place a slice of the mozzarella on the bread, put it back under the broiler for 30 to 45 seconds to melt slightly. Then top with tomato.

Make a "big" batch, and use the left over mixture on pasta the next day.
