1 1/2 pounds cod fillets
2 T lemon juice
1/8 tsp freshly ground black pepper
2 large tomatoes, sliced 1/4 inch thick
1/2 medium green pepper, finely chopped
2 T chopped onion
1/4 cup dry bread crumbs
1/2 tsp dried basil OR 1 T chopped fresh basil
1 T oil

Directions:
Directions:
Place fish on oiled baking dish. Season with lemon juice and pepper.
Place tomato slices on fish and sprinkle with green pepper and onion.
In a small bowl, combine bread crumbs, basil, and oil. Spread the mixture evenly over the tomatoes.
Bake uncovered in a preheated 350º oven for 25 minutes.
