2 cups water
1 cube or teaspoon bullion
2 8 oz packages Turkey Canadian Bacon, cut up in about 1 inch or so pieces (not too small!)
2 16 oz packages Turkey Sausage chopped
8 to 12 potatoes, skinned and chopped
2 medium or 1 large onion, peeled & sliced
salt & pepper to taste
4 cups water

Boil 2 cups of water and add the bullion. Add Canadian bacon and sausage and let simmer 5 minutes.

Fill bottom of Dutch oven or large pan with a layer of chopped potatoes. Add layer of onions (one onion’s worth). Add half of the meat. Repeat - another layer of potatoes, onions and meat. Top with last layer of potatoes. Add liquid the meat was cooked in plus remaining 4 cups of water. Salt and pepper.

Simmer for 1 hour.

We found a recipe for Dublin Coddle online for St Patrick's Day (or Irish week as it's evolved into) and made some adjustments to cut out the pork.. since then I've tweaked it quite a bit and this is the result. It's become one of our favorite meals.
