First Stage
3/4 cup of olive oil
8 oz cherry tomatoes
1 cup diced carrots
1 cup diced celery
1 cup diced white onion
3 garlic cloves
2 teaspoon salt
1 teaspoon freshly ground black pepper

Second Stage
3 tablespoons olive oil
1/2 cup finely chopped white onion
1 fat garlic clove
salt and pepper
3 sprigs of basil
2 tablespoons sugar, as necessary

Directions:
Directions:
Put all first stage ingredients in a large saucepan and cook over medium heat breaking up the tomatoes. Bring to a boil, reduce and simmer for 50 minutes. Put through a food processor.

For the second stage, heat oil, garlic and onion. Sir in sale and pepper, cook for 7 to 10 minutes. Add basil and tomato mixture. Cook for 40 minutes or and the consistency becomes like a sauce. Adjust taste with salt, pepper and sugar.
