■1 1/4 lb ground turkey
■1 medium yellow onion, diced
■1 large zucchini, shredded
■1 large celery stalk, finely chopped
■3 medium carrots, shredded
■1 red bell pepper, finely chopped
■1/2 lb mushrooms, chopped
■4 garlic cloves, minced
■3/4 cup old fashioned rolled oats
■1/2 cup unsweetened applesauce
■2 tbsp tomato paste
■1/4 cup fresh parsley, finely chopped
■1/4 cup liquid egg substitute
■1/2 tsp paprika
■1 tsp salt
■1 tsp black pepper

Preheat oven to 350 degrees F, in a nonstick skillet saute vegetables and garlic with a small amount of olive oil or cooking spray, mix all ingredients together in a large bowl, place into loaf pan and bake for 70 minutes
