1 whole head cauliflower
2 Tbsp butter
flour (about 3 Tbsp)
milk (1 cup)
4 oz cheddar cheese, grated
1/4 tsp salt

Directions:
Directions:
Steam whole head of cauliflower over boiling water until just tender.
Make cheese sauce: melt butter over medium heat in small heavy saucepan. Add enough flour to make a thick paste (about 4 Tbsp), stir with a whisk for 1 minute. Gradually whisk in 1/2 c milk (to prevent lumps), then whisk in the remaining 1/2 c milk and salt. Cook for a few minutes stirring constantly until it makes a thick sauce. Add cheese, stir until cheese melts. (If too thick, add additional milk 1 Tbsp at a time).
Place whole cauliflower on a serving plate, pour cheese sauce over the top allowing it to drip down the sides. Pass remaining sauce in a small bowl.
