1 large head broccoli
1 Tbs butter
2 Tbsp flour
pinch dry mustard (optional)
pinch of salt
1 c milk
1 C shredded cheddar cheese

Directions:
Directions:
Trim and cut the broccoli into florets. Cook in a small amount of boiling water or steam until just tender.
Melt the butter over medium heat in a small saucepan. Stir in flour with a whisk (will make a thick paste). Stir in salt and dry mustard if using. Stir and cook for about a minute. Gradually add the milk, whisking continuously to prevent lumps. Cook over medium heat stirring constantly until it begins to thicken. Add shredded cheese and stir until melted. Should be a thick sauce, however if it is too stiff add a bit of milk.
Pour sauce over broccoli florets and serve.

*can mix broccoli and cauliflower florets, double the sauce, and mix all in a casserole dish to serve.

This may be the only vegetable Tim ate his first two years... Smothering it with cheese was the trick.
