1 lb macaroni, cooked
1 1/4 lb grated sharp cheddar (Cabot Seriously Sharp Cheddar is good)
4 eggs
1/2 stick butter
2 c milk (can sub 1 can evaporated milk plus water to make 2 c)
salt to taste (about 1 tsp)
pepper to taste (about 1/2 tsp)
Optional: 1/2 tsp dry mustard
Optional: 8 oz cream cheese

Butter a 3 quart casserole dish, fill with cooked macaroni.
In a large saucepan heat the butter and milk on Medium heat until the butter is melted. Cut cream cheese in cubes if using and stir in. Gradually stir in grated cheddar, stirring until mostly melted. DO NOT BOIL. Stir in dry mustard, salt and pepper. Pour melted cheese mixture over macaroni in pan. Bake uncovered at 375º for 45 minutes.
