1 1/4 oz. envelope active dry yeast
1/4 C sugar, divided
1 C warm water (105-115 degrees)
4 C flour, divided
1/4 C + 2 tsp extra virgin olive oil, divided
3 eggs, lightly beaten
1/2 tsp salt
2 T fresh parsley, chopped
1 C grated asiago cheese
1 large garlic bulb

Directions:
Directions:
Combine yeast, 2 T sugar and water in a 2 C measuring cup and let stand 5 minutes. Combine with two cups flour, 1/4 C oil, eggs, sugar, salt and parsley in large bowl. Mix well for two minutes. Mix in cheese and remaining flour until soft dough forms. Cover and let rise in a warm place (85º) one hour until doubled.

Cut off pointed end of garlic bulb and place square of foil. Drizzle with 1 T olive oil and wrap. Bake at 350 degrees for one hour, cool 5 minutes. Squeeze pulp onto foil and set aside.

Punch down dough and place in large lightly greased bowl. Cover and let rise in warm place for 45 minutes until doubled. Place dough on lightly floured surface and fold garlic into dough. Form into loaf and place seam side down on on lightly floured baking sheet. Brush with oil and sprinkle with remaining cheese. Bake at 375 degrees for 30 - 40 minutes or until golden.
