2 c flour*
1 c sugar
2 tsp baking powder
2 tsp cinnamon
1/4 tsp ginger
1/2 c shredded carrots (I use 1 1/2 c carrots)
1/2 c raisins (or dried cranberries)
1 8 oz can crushed pineapple
2 eggs
1/2 c butter, melted (can substitute oil for some or all)
1 tsp vanilla
1/2 c chopped nuts (optional)
*can use any mix of white, oat, and whole wheat flour.

Directions:
Directions:
Combine flour, sugar, baking powder, cinnamon and ginger. Stir in carrots, raisins and nuts. Separately combine undrained pineapple, eggs, butter and vanilla. Stir into dry ingredients until just blended. Spoon into greased muffin tins. Bake at 375º for 20 minutes. Cool on wire rack. Makes 12 to 18.

I did 350 degrees for 22 minutes
I added 2 oranges, peeled seeded and chopped in the food processor, used 1 1/4 c shredded carrots, and added 1/4 c oat bran.
