2 lbs carrots, scraped and sliced diagonally
2/3 c orange marmalade
2 Tbsp brown sugar
2 Tbsp butter
3 Tbsp spiced rum
1/2 c coarsely chopped pecans

Directions:
Directions:
Steam carrots over boiling water, 10 mins or until crisp-tender. Transfer carrots to a serving bowl. Gently stir marmalade into carrots until marmalade melts.

Combine the butter, rum, and brown sugar in a small saucepan. Cook over medium heat until butter and brown sugar melt. Add pecans and simmer until thick. Pour over carrots in bowl and toss gently.

For an even easier dish, just mix the marmalade with the cooked carrots and stop there..
