1 lb Ground Beef
2 Eggs
4 Zucchinis
Small package of feta cheese (tomato basil works really well)
Shredded asiago (optional)
Minced garlic
Onion powder
1 14oz Can of diced tomatoes (dice some fresh ones if you have them)
Fresh basil
EVOO

Directions:
Directions:
Preheat oven to 375º and boil a pot of water.
Saute garlic in EVOO then add the ground beef over medium heat until brown.
When water is boiling, put in the zucchini for 4 minute to cook them a little, then rinse with cool water so you can handle them.
Cut zucchini in half and scoop out the innards. Chop them into small pieces.
Add the zucchini innards to the beef as it is cooking, season it with onion powder, salt, and pepper to taste.
When the beef is fully cooked, mix in a bowl with feta, tomatoes, and eggs.
Put zucchini boats in a baking dish and fill with meat, surrounding the boats with any extra meat. Optionally add the asiago cheese on top here.
Bake for 20-30 minutes

I usually don't start the meat until the water is boiling, it can take a while to make the zucchini boats and the meat might be done before you can put all of the zucchini in it.
