1 can black beans, drained and rinsed
2 cups mango, diced
1 cup red bell pepper, diced
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1/4 cup fresh lime juice
1 tablespoon olive oil
1 seeded Jalapeno pepper, minced or hot sauce to taste
1 c cooked quinoa (optional)
Salt to taste

Mix all ingredients and chill. If lime juice is too strong, I will add 1 small packet sugar sweetener.
