3 cups citrus peel
water
1/2 cup honey
1 1/2 cups sugar
(3 cups citrus peel is about 4-5 oranges, 6 lemons, 2 grapefruit, 8-9 large tangerines. In order to avoid pesticides use organic fruit.)

Wash fruit, peel and cut peel into strips. Cover with about 6 cups of cold water in a heavy pot, bring to a boil and boil, uncovered, for 10 minutes. (For tangerine peel boil only once.) Rinse pot and peel and repeat with fresh cold water. Rinse again. Place 1 3/4 cup water in the pot, bring to a boil. Add 1 1/2 cups sugar, 1/2 cup honey, bring to boil and let it boil up for 1 minute. Add peel. Simmer briskly for 30-40 minutes or until almost all the syrup has been absorbed. Stir often. Watch carefully so it does not burn. Drain in a colander overnight.

You can roll the peels in sugar and dry on a cookie sheet or dip them in chocolate. They last for a long time in a tightly covered container in the fridge or freezer. These are much better than store-bought for cooking in Stollen, fruitcake, gingerbread or panfortina. I love to eat it plain.
