1 medium orange
1 cup Biscuit mix (like Bisquick, though I prefer Pioneer Brand Baking Mix)
1/2 cup sugar
1/4 cup butter (cut in small pieces)
1 teaspoon vanilla
1/2 cup dried cranberries (Craisins)
2 teaspoons sugar

Directions:
Directions:
1. Preheat oven to 350º.
2. Remove zest from orange using grater and reserve zest. Juice orange. Measure juice and add water, if needed, to get to 1/4 cup.
3. Place biscuit mix, sugar, and orange zest in bowl and blend together. Add butter and cut in with pastry blender or fork until crumbly.
4. Add 1/4 cup orange juice and vanilla to dough and stir with fork just until mixed. Fold in dried cranberries.
5. Grease a round cake pan. Pat dough lightly into cake pan. Sprinkle sugar over dough.
6. Bake for 25 – 30 minutes until light brown around edges.
7. Cool in pan. Cut into 8 wedges and serve.
