2 pie crusts
1 tablespoon canola oil
8 oz. fresh mushrooms
1/2 pound Mexican chorizo, casings removed
1 1/2 cups grated Fontina cheese
1/4 cup finely grated Cotija cheese
2 to 3 green onions, (dark and pale green part) thinly sliced
2 teaspoons chopped fresh thyme leaves
10 large eggs
1 3/4 cups milk
1 3/4 cups heavy cream
4 ounces soft goat cheese, frozen for 10 minutes and cut into 1/2-inch pieces
*eight ounces of sautéed spinach may be added

Preheat oven to 375 degrees.
Pat pie crust into the bottom of a 9x13 inch glass casserole.
Saute mushrooms in the canola oil.
Fry chorizo and crumble into pie crust along with sautéed mushrooms and onions.
Beat the eggs, add the cream, thyme and milk.
Pour egg/milk mixture into crust and top with the cheeses
Bake at 375 for fifty-five minutes or until cheese is bubbling and browning
DO NOT cut into it right away! it must set AT LEAST ten minutes.
