1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 egg
1/2 tsp vanilla
1 egg white
1 tsp water
3/4 cup lightly salted peanuts, finely ground
42 chocolate-covered peanut butter bites

Combine flour, baking soda and salt. set aside. In a large bowl, beat shortening, peanut butter, granulated sugar and brown sugar with electric mixer until well blended. Add egg and vanilla. Stir in flour mixture; blend well. shape cookie dough into 1 inch balls Whisk together egg white and water. Roll dough in egg white mixture, then peanuts. Place on cookie sheets 1 1/2 inch apart. Using thumb, make a small depression in the centre of each ball.

Bake at 325ºF 10 - 12 minutes or until golden brown. Remove from oven. Immediately press 1 chocolate covered peanut butter bite in the centre of each cookie. Cool cookies on cookie sheet 5 minutes. Transfer cookies to cooling grid; cool completely.
